Damson Preserves
Wipe damsons with a piece of cheese-cloth wrung out of cold water, and prick each fruit five or six times, using a large needle; then weigh. Make a syrup by boiling three-fourths their weight in sugar with water, allowing one cup to each pound of sugar. As soon as syrup reaches boiling-point, skim, and add plums, a few at a time, that fruit may better keep in shape during cooking. Cook until soft. It is well to use two kettles, that work may be more quickly done, and syrup need not cook too long a time. Put into glass or stone jars.

    Making Fruit Spreads Preserve It Right
    Jams, jellies, marmalades, preserves, and conserves are sweet spreads made from fruit or juice; they differ in firmness, clarity and ingredients.

    Jam is made from crushed or ground fruit and usually has a thick consistency.

    What's Cooking - Homemade preserves, jams and jellies are easy to make

    By Rick McDaniel Star / Gazette Food Columnist There’s nothing like the fresh taste of homemade jams, jellies and preserves to brighten up a cool, fall morning. They’re easy to make and a great way to use the summer’s fresh fruits. Sweet spreads such as jelly, jam, preserves, conserves, marmalades and fruit butters are similar products. All are made from fruit, preserved by sugar and thickened either by boiling them down or by a thickener such as pectin. Jelly is a mixture of fruit juice and sugar that is clear and firm enough to hold its shape. Jam is made from crushed or chopped fruit. Jam holds its shape, but is less firm than jelly. When jams are made from a mixture of fruits they are usually called conserves, especially when they contain citrus fruits, nuts, raisins or coconut. Preserves are made of small, whole fruits or pieces of fruits in a clear, thick, slightly gelled syrup. Marmalades are soft, transparent fruit jellies that contain small pieces of fruit or citrus peel.

    MISCELLANEOUS MADZOON Yogurt TAHN Yogurt drink ... Convert US weights to metric MADZOON -Anahid Merigian
    (Yogurt) 1 qt. homogenized milk
    1/4 cup yogurt (starter)
    1/2 pint heavy cream Pour the milk into a saucepan and bring to a boil, stirring constantly. When it comes to a boil, add 1/2 pint of heavy cream, and pour into an earthen bowl or Pyrex dish. When it is lukewarm, stir the madzoon starter with a spoon until it is smooth and dilute it with some of the warm milk. Pour this mixture into warm milk and stir. Set your oven to 200F. When heated, turn off oven and place bowl in oven. Check in 2 hours for firmness. Makes 1 quart Variation: Use skim milk instead of whole milk and eliminate cream. Note: You may use commercial plain yogurt as your starter. TAHN
    (Yogurt drink) 3 cups yogurt
    1 cup cold water
    pinch of salt Mix all ingredients together until smooth ith spoon, beater or place in blender with 2 ice cubes. Serves 4 JAJUKH
    (Yogurt with cucumbers) 2-1/2 cups peeled, diced cucumbers

    Fresh Fig Preserves Recipe Ingredients
    4 pounds firm, ripe figs
    4-1/2 pounds sugar 1/4 cup fresh lemon juice 2 lemons, sliced A few pieces of whole stick cinnamon or ginger root (optional) Instructions Wash and peel figs; set aside. Combine sugar and lemon juice in large nonreactive saucepan; add enough water to dissolve sugar. Add figs and lemon slices; cook about 45 minutes (the cinnamon or ginger may be tied in a cheesecloth bag and cooked with figs for added flavor). Stir frequently to prevent sticking. Pack preserves into clean, hot jars, and seal immediately. Process in boiling water bath 5 minutes for half-pints, 10 minutes for pints. Makes 8 to 10 (6-ounce) jars.

    Before I started using a microwave oven, I thought it was wasteful to buy a whole box of strawberries or blueberries because I could not eat them all by myself. Now I can enjoy a bowl of strawberries and cream or make Blueberry Streusel Cake and turn the leftover fruit into microwave preserves.
