  • The Recipe Network home site AllRecipes.com at http://www.allrecipes.com includes http://www.cakerecipe.com/ - As they say "All cake, all the time". Don't forget to play their Recipe Roulette! They have their site set up to do metric conversions, to print out your selections on 3x5 or 5x7 cards, and links to some other sites they are putting together. http://www.neosoft.com/recipes/ is a "database" of recipes selected by the moderator of rec.food.recipes as the best from articles posted there- if you can not find it here ask someone that is not on the net yet. Grandma is not wired yet is she, or is she not sharing her snickerdodles?

What you should know before
trying some of these Irish Recipes. Many of these items can be found in supermarkets specializing in import goods or specialty Irish Stores. Allspice: Also called pimento or Jamaican peppers, this berry combines the flavors of cinnamon, cloves and nutmeg. Used in both sweet and savory dishes. Allspice is sold whole or ground. Bay Leaves: The leaf of an evergreen laurel tree, also known as cherry laurel. Used as a flavoring in curries, beef dishes, pies, soups and preserved fish. Black Pudding: A large black sausage made with pig's blood, suet, steel-cut oats and seasonings, encased in pig's intestine. High in fat, carbohydrate and iron. Blanching: To plunge food into boiling water for a few minutes to partially cook, but retain crispness. Butterfly Pork Steaks: These are cut from the mid loin section of a pig. The steak is about 1 inch thick, cut almost in half and opened out. Buttermilk: A cultured milk product. It is produced from the liquid left after churning butter. In Irish Cookery it has been used since earliest times both as a beverage and for cooking. If buttermilk is unavailable sour milk may be used. Add one teaspoon of lemon juice or vinegar to each cup of milk. Cod: A medium to large fish with white, moist flesh and a mild flavor. Found in the Atlantic and Pacific oceans. If cod is unavailable any firm, white fish fillet or cutlet can be used instead.

When I started cooking professionally in 1964 many country houses were still in healthy existence. It was here, without question, that one got the best food in Ireland, save for perhaps, Jammet's Restaurant an th Russell Hotel in Dublin. The inspiration and establishment of the Irish Country Houses and Restaurants Association saved many of these houses along with their architecture, gardens and cuisine. Here in the rural areas families know where to get the prime supplies in medium sized quantities - not too big for the producer to cope with nor too small to bother with. This means fresh fish from a neighbour with a small boat; prime meats from a small intimately managed slaughter house; fat fowl from a farmer's wife. Not only do traditional rural skills survive, but along with fresh fruit, herbs and vegetables from the garden, our Country Houses offer flavours that are almost forgotten.
