Review Contents - Elegant Irish Cooking plays host to over 100 Irish guest chefs, "narrated" by Master Chef, Noel Cullen. Cullen himself an Irish chef who now calls Boston home holiding the post of Professor of Culinary Arts at Boston University.
What's Hot - "Irish cooking has grown and developed from the rich bounty of its land and water", not from out side influences. Fittingly the book features a great introduction with a very readable history of Irish cooking from the 2nd century AD to somewhat more recent times. The book's recipes are well laid out and there are some tasty treats to be found such as the from chef Colin O' Daley of Dublin restaurant Roly's Bistro.

The Cookery Centre is located in a restored 18th Century dairy and milking parlour. It is a purpose-built cookery demonstration kitchen, designed to hold 12 to 14 people in comfort. Poached Eggs on Toasted Soda Bread:
Ingrediants (per person): 1 goose (hen or duck), egg, 1 tsp white wine, vinegar, 2 slices of Soda Bread with Hazelnuts toasted, Irish butter, 1 tsp balsamic vinegar, salt and pepper.
Instructions:
In your poaching pan, boil 1.5 pints (900 ml) water. When boiled, add the white wine vinegar and reduce the heat. Carefully crack in and submerge the egg in the liquid, and allow to set for about 4 minutes (less for smaller eggs). Remove the egg from the liquid and arrange on buttered toast. Pour over the balsamic vinegar, and season with salt and pepper to taste.
Fraughan Pie:
Ingrediants (serves 4):
Pastry, 4oz (110g) plain flour, a pinch of salt, 2oz (55g) Irish butter or margarine, 1 - 2 tbsp cold water.
Filling, 1lb (450g) fraughans or blueberries, 4oz (110g) light brown or cane sugar, 2 tbsp clear honey, juice of 2 large lemons or 2 fl oz (55ml) lemon juice.

Overall: How better to test an Irish cookbook than with a potato recipe? I served it with scrambled eggs and a green salad for lunch. Delicious and easy.
A problem: It's called "potato pancakes," but the recipe seems to tell you to make one large pancake (similar to roti potatoes or a potato kugel). That's what I did. Otherwise, wouldn't we be told to drop tablespoons of the mixture into the pan?
Peeling the potatoes: As a longtime latke maker, I tend to do this on a four-sided metal grater, with a box of Band-Aids nearby to use on grated knuckles. I suppose you could do it by pressing it through the grating disc of the food processor. In any case, put the shreds of potato into a bowl of cold water. When you take them out, you'll find that starch has settled to the bottom of the bowl. This can be stirred into the final mixture to give it more body.
Canadian bacon: This is the Western hemisphere equivalent of Irish back rasher, made from the loin of pork. Cut the strips very thin so that they nearly melt into the potatoes.
One teaspoon parsley: Here's the giveaway that this is a chef's recipe, one that has been cut down from what was probably a cup of parsley in the restaurant. What sane cook would chop one teaspoon of parsley? Go ahead and use a tablespoon or even more. (But resist the temptation to make the pancake too green in honor of Ireland.)
