Indian cooking uses a wide array of spices and herbal seasonings, whose rich flavors more than make up for a low proportion of fat. And since Holi is a religious holiday, foods are vegetarian. Studies show a connection between a mostly plant-based diet and cancer prevention. In practical terms, this means vegetables, fruits, whole grains and beans should cover two-thirds (or more) of the plate and animal-source foods should cover one-third (or less). Animal meats are used sparingly (if at all) in the traditional Indian diet, mainly as flavorings in hot curries or side dishes. With vegetables, fruit, whole grains and beans in the forefront, this eating style follows most modern-day medical advice for a healthy diet that helps prevent chronic illnesses like heart disease and cancer.

But, above all, I smelled fish (no pun intended!). While I ran about the house and tried to trap butterflies fluttering among yellow cosmos swaying in the autumn breeze, I smelled the smell of fish frying in mustard oil. And, I heard the sizzle. As fish would cook, I would stir or flip it with khunti, or a steel spatula. This is another utensil somewhat similar to its Chinese counterpart, but narrower and straighter. I just loved stirring anything! My mother cooked all kinds of stuff: fish, goat meat, vegetables, egg and lentils. But fish was always a constant. Ours was a truly Bengali home, and so fish formed a principal part of our cuisine. Bengalis (folks from Bangladesh and the state of West Bengal, India) share a passion for fish, especially ilish, a fish of the herring family very similar to the American shad. We had fish almost every day. Two of the most frequent dishes that she cooked were macher jhal (peppery fish) and macher tarkari (fish and vegetable curry). My relationship with fish was restored. I realized that fish can be tasty anywhere, whether it be or riverine or marine. In America I cooked Indian food, including fish, first out of necessity. I didn't have my mama with me. Then I learned to cook foods of other countries out of interest and curiosity, especially after my stint as a part-time cook at a Marriott cafeteria on campus. But, I will always remember those boyhood days when I first stirred food with my mother, especially the sputtering of mustard seeds in mustard oil.

    Now linked by The Global Gastronomer Most Indian cuisines are related by similiar usage of spices . Often, Indian cooking is distinguished by the use of a larger variety of vegetables than many other well-known cuisines. Within these recognisable similarities, there is an enormous variety of local styles. In the north and the west, Kashmiri and Mughlai cuisines show strong central Asian influences. Through the medium of Mughlai food, this influence has propagated into many regional kitchens. To the east, the Bengali and Assamese styles shade off into the cuisines of East Asia. All coastal kitchens make strong use of fish and coconuts. The desert cuisines of Rajasthan and Gujarat use an immense variety of dals and achars (preserves) to substitute for the relative lack of fresh vegetables. The use of tamarind to impart sourness distinguishes Tamil food. The Andhra kitchen is accused, sometimes unfairly, of using excessive amounts of chilies. All along the northern plain, from Punjab through Uttar Pradesh and Bihar, a variety of flours are used to make chapatis and other closely related breads. In the rain-swept regions of the north-eastern foothills and along the coasts, a large variety of rices are used. Potatoes are not used as the staple carbohydrate in any part of India. Modern India is going through a period of rapid culinary evolution . With urbanisation and the consequent evolution of patterns of living, home-cooked food has become simpler. Old recipes are recalled more often than used. A small number of influential cookbooks have served the purpose of preserving some of this culinary heritage at the cost of homogenising palates. Meanwhile restaurants, increasingly popular, encourage mixing of styles. Tandoori fish, mutton dosas and Jain pizzas are immediately recognisable by many Indians in cities.
