These classes provide students the training they need to become proficient cooks without the cost or time commitment of a traditional culinary academy. Students will learn all the essentials of classic culinary technique as well as receive basic training in ethnic cuisines and advanced recipe development
The Creative Cooking School offers the amateur and home chef classes on a variety of subjects. These classes feature seasonal produce and focus on proper food preparation technique. Demonstration Classes generally run for two to three hours. Many of our classes are hands-on, so the student can truly learn how to cook for himself or herself. These classes are four to five hours in length. We have guest and celebrity chef instructors as well as special seminars on food and wine pairings. There are also classes on event planning, party planning and catering. Recipes in cookbooks and even watching recipes demonstrated on TV cannot equal the learning experience of a real cooking class. In classes you have the opportunity to use your five senses to see, hear, smell, touch and taste everything including the final prepared dish. You have the opportunity to interact with the instructor and ask questions in a cooking class to help you better understand the concepts and techniques.

A little trivia:
Although you'd never know it from the taste, chocolate comes from the Aztec word xocolatl, meaning "bitter water." Montezuma, the king of the Aztecs, supposedly drank 50 golden goblets of it every day, as he believed it was an aphrodisiac. A tropical cocoa bean called Theobroma (meaning "food of the gods") cacao is the source of this delicious confection. Different kinds: Unsweetened: Also called "baking" or "bitter," this is the purest chocolate you can get, with nothing added. Bittersweet: Add sugar, lecithin (for a wonderfully smooth texture), and vanilla, and you get the bittersweet version. Semisweet: Although it contains the same additives as its bittersweet cousin, semisweet chocolate has a little more sugar (but less fat). Milk: Adding dry milk to sweetened chocolate creates the basis of so many of your favorite candy bars.

Reviewed by John D. Borders, Jr., J.D. Many restaurants across the country are trying to serve more meatless fare these days because of an increasing consumer demand. But often they strike out because the quality of their vegetarian food doesn’t match that of their meat-and-dairy-laden counterparts. With the release of Professional Vegetarian Cooking, chefs everywhere will find it easy to put spectacular plant-based options on their menus. As one of only three professional vegan cooks with Certified Executive Chef status in the American Culinary Federation, Chef Ken Bergeron is quite well known within the vegetarian community. His annual appearances at the North American Vegetarian Society (NAVS) Summerfest are always a highlight of the festival. Chef Bergeron has also presented for several EarthSave groups. Professional Vegetarian Cooking is a great resource for chefs, not only because the recipes are spectacular, but also because it offers a clear explanation of why restaurants might want to serve vegetarian dishes and why restaurant patrons choose vegetarian diets in the first place. The first Gold Medal winner for all-vegan savory foods presentations at the Culinary Olympics in Germany, Chef Bergeron presents an amazingly creative array of recipes in his first cookbook. From the simple “Carrot Hazelnut Spread” to the complex “Vegetable Walnut and Pecan Terrine,” the appetizer section is vast enough to cover any dinner party or seasonal menu. The “Winter Squash Hazelnut Bisque,” the “Mushroom Cashew Crème Soup” and the “Corn Chowder” prove that the use of nuts and nut butters can give vegan soups all of the richness and complexity of cream-based soups. Indeed, the corn chowder is positively the best chowder you will ever eat.
