Chocolate is a very tricky food to cook with. Temperatures that are too high can scorch it, temperatures too low can cause it to harden unevenly .It must be watched very carefully. But if you can master the art, you can create some breathtaking desserts. Below are some thing to know about cooking with chocolate.
WHAT IS TEMPERING?
In order for chocolate to cool into a hard candy and not a mushy goo it must be tempered. This is a process where the chocolate is slowly heated, then slowly cooled, allowing the cocoa butter molecules to solidify in an orderly fashion.
The following is a pretty thorough method for tempering. Chocolate contains two distinct types of fat, each of which melts at different temperatures. In order to ensure that the chocolate will melt smoothly and harden evenly with a good shine, it must be handled carefully.
  • Chop the chocolate coarsely with a chef's knife and place it in a stainless steel bowl.

Frozen Coffee Parfait
Makes 6 to 8 servings. We recommend one of the following coffees for this recipe: Yemen Mocha, Mexico Bourbon de Coatepec, or, Java Blawan Washed. In a large bowl, combine the sweetened condensed milk and the coffee with mixer on high whip for three to five minutes and then, by hand, fold in the whipped whipping cream. Make sure the mixture is evenly distributed. 1 14 oz can sweetened condensed milk Spoon the mixture in 6 to 8 serving dishes, then freeze for 3 hours or until firm. 1/3 cup double strength coffee (sweetened with 4 tablespoons of sugar while hot) allow to cool before using Garnish before serving with a chocolate covered coffee bean and chocolate syrup if desired. Return leftovers to the freezer. 1 cup whipped heavy whipping cream
Serves 10 to 12 depending on the thickness of the slices 1 Pillsbury or other Moist Cake mix (the kind with pudding in the mix) Milk Chocolate or German Chocolate Instead of beating only at low to medium speed with the mixer, use low speed to blend the ingredients and then, using high speed, beat the batter for 3 to 5 minutes till it is fairly fluffy.

Could any one ingredient be more glorious? Doubtful. Chocolate inspires nearly everyone, from the youngest child to the oldest grandfather. You'll undoubtedly be using this most Fabulous Food often in your cooking. Here's what you need to know to get the most from the chocolate experience. Chocolate comes in many forms: unsweetened, semi-sweet, bittersweet, milk chocolate and white chocolate (which technically isn't chocolate at all, but does have similarities so we'll include it here as well). Chocolate is unique among vegetables in that its fat (cocoa butter) is solid at room temperature. Since this fat melts at mouth temperature, chocolate is an excellent flavor conductor. Cocoa powder is made by separating most of the cocoa butter out of the liquor. Similar to coffee, cacao beans are dried and roasted before being hulled. "Chocolate liquor", made from the roasted, ground cocoa bean nibs (the meat of the cacao bean) is what makes chocolate chocolate. Thus, unsweetened chocolate is pure chocolate liquor and about 50% cocoa butter. Bittersweet chocolate blends at least 35% liquor with as much as 50% with cocoa butter, sugar and vanilla. Semisweet chocolate has the same ingredients as bittersweet with the addition of more sugar. Milk chocolate, which contains about 10% chocolate liquor, takes the process a step further by adding about 12% milk solids.

Chocoholic: - n [chocolate + -oholic (as in alcoholic)](1968): a person who craves or compulsively consumes chocolate. - Webster's Dictionary Did you know that the Aztecs considered all chocolate an aphrodisiac? Because of this, all foods made with chocolate were strictly forbidden to women. Although chocolate is not an aphrodisiac, chocolate contains phenylethylamine (PEA), a natural substance that is reputed to stimulate the same reaction in the body as falling in love. So - heartbreak and loneliness are great excuses for chocolate gorging! It is said that Napoleon carried chocolate with him on his military campaigns to give himself quick energy. Christopher Columbus is said to have brought back cacao beans to King Ferdinand from his fourth visit to the New World around 1502, but they were overlooked in favor of the many other treasures he had found. Records suggest that he didn't particularly like the Aztec delicacy of "hot chocolate"- a thick cocoa drink laced with ground chillies and dyed red to look like blood - but recognising its potential he took a load of cocoa beans back to Spain.

In a 1 quart glass jar, layer the ingredients in the following order: Flour mixture, walnuts, 1/2 cup of the mini candy coated chocolates, oats, remaining candies, and brown sugar. pack down well after each addition and attach a tag with the instructions. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. In a large bowl, cream together 3/4 cup of butter, 1 egg and 3/4 teaspoon of vanilla until light and fluffy. Stir int he contents of the jar until well blended. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1-1/2 cups smooth peanut butter
1/2 cup semisweet chocolate chips, melted 1/4 cup butter or margarine, softened 1/4 cup confectioners sugar 1 teaspoon vanilla extract 1 teaspoon instant coffee granules 1 teaspoon hot water Instructions In a large bowl, combine first 5 ingredients; stir until smooth. Combine coffee granules and water; stir until coffee dissolves. Stir coffee into peanut butter mixture. Serve with cookies or crackers. Store in an airtight container.
