Ratjetoe 300 grams lean hamburger
nutmeg, salt and pepper
30 grams margarine
2 chopped onions
2 cloves garlic
150 ml sour cream 150 ml stock or bouillon 750 gram new (small) potatoes 300 grams grated cheese In a skillet heat the butter and fry the beef, adding salt, pepper and nutmeg, the chopped onion and the pressed garlic clove, and separate with a fork. Grease a baking dish. Mix the sour cream and bouillon. Put a layer of potatoes in the dish, add a layer of meat, a layer of cheese and keep adding layers, finishing with a layer of potatoes. Beer Cheese Soup
    1 yellow onion, diced 1 green pepper, diced 2 TBS chopped garlic 1/4 pound unsalted butter 1/4 pound flour (3/4-1 cup) 2 cups amber ale (such as Fat Tire) 1 pound cream cheese 3 quarts milk 2 pounds shredded cheddar cheese 1 TBS Worcestershire sauce 1/4 cup chopped parsley salt, white pepper and dry mustard to taste
Melt butter, sweat onions and peppers (cover and cook slowly) until translucent, add chopped garlic. Sprinkle and stir in flour, cooking slowly for 15 minutes, stirring regularly. Add beer and whisk in until smooth. Melt in cream cheese. Add milk and bring slowly up to a simmer. Add shredded cheese slowly. Stir in parsley and season to taste salt and pepper. Makes 12 plus servings.

REILLY'S TUNA NOODLE CASSEROLE
3 cups uncooked elbow macaroni or 4 cups uncooked larger noodle (we use bowtie...farfalle)
Cook the macaroni until done, drain, and set aside.
one tablespoon butter
1/4 cup chopped onion
1/4 cup shredded carrot
1/4 cup chopped celery
1/4 cup chopped red pepper
Saute the onion, carrot, pepper and celery in the butter until onion is translucent and soft.
In a large bowl, mix the cooked veggies with one can of reduced-fat cheddar cheese soup (11 oz. can). Add one cup of light sour cream and 1/2 cup milk, you can use nonfat milk. Than add 1/2 cup shredded sharp cheddar cheese.
Stir in the cooked macaroni and GENTLY add two small cans or one large can tuna packed in water, drained.
Pour into a 1 1/2 quart casserole, sprinkle with another 1/2 cup shredded sharp cheddar and 1/4 cup shredded parmesan or romano cheese. Cover tightly. Here's the fun part...top with 1/2 cup of extra cheddar Goldfish crackers...not the bland ones but the extra cheesy ones..they taste like Cheese Nips. It is a cute tie-in, yes? Get it? 1 pound penne
2 tablespoons olive oil 1 pound mushrooms, sliced 1 large onion, chopped 2 cloves garlic, finely chopped 1/4 cup all-purpose flour 4 cups low-fat (1%) milk 1/2 teaspoon salt 1/4 teaspoon ground nutmeg 4 teaspoons fresh lemon juice 1/4 teaspoon black pepper 1-1/2 cups shredded reduced-fat cheddar cheese (6 ounces) 1-1/4 cups shredded reduced-fat Swiss cheese (5 ounces) 1 cup shredded reduced-fat Monterey Jack cheese (4 ounces) Instructions Cook penne in a large pot of lightly salted boiling water until al dente, firm but tender. Drain well. Meanwhile, heat 1 tablespoon oil in a large skillet over medium-high heat. Add mushrooms, saute 8 minutes or until tender. Remove form skillet.

There are no secrets to cooking with cheese, but there are a few things you should know:
  • Use low heat: just enough to melt the cheese and blend it with other ingredients. High heat makes the cheese tough and stringy.
    Avoid long cooking periods. Again, cook just long enough for it to melt. Like high heat, long cooking also tends to make the cheese tough.
    Shred, grate, cube or dice the cheese to promote even melting.
    When broiling foods with cheese toppings, place the broiler pan so that the food is 4 to 6 inches from heat; broil just until the cheese is melted.
    When microwaving cheese, use 30 percent (medium-low) to 70 percent (medium-high) power.
    It's easiest to measure cheese based on the weight: 4 ounces natural cheese = 1 cup shredded

Since Cheese is a produce obtained by the enzymatic ripening of milk, it is also one of the easiest food substances to digest. You will agree that it is just what growing children need, specially the ones who never seem to want those necessary cups of milk.
Cooking of Cheese
Cheese requires gentle handling. It is a delicate flavoursome substance that must not be overcooked. The flavour of cheese is exclusive. It is as easy to enhance as it is to destroy. Always use the full quantity of cheese mentioned in a recipe. Cheese, especially in Indian recipes requires a light masala base. When putting cheese in curries, lessen the ginger and garlic, strong flavours that interfere with the cheese taste. Strong heat isn't good for cheese - in baking, grilling or pot cooking. In frying, since the cheese is normally covered or coated it can withstand a high fire without spoiling. When a recipe calls for sliced cheese, thin slices are advised because they melt more easily. Sliced cheese is considered cooked as soon as melts. In its grated form cheese can melt, bubble and brown without toughening. Broadly speaking you are safe in mixing cheese with most firm vegetables. Of the soft ones aubergines suit best. Cheese adds flavour to lentils and pulses. Eggs and cheese are the traditional twosome. The Indian equivalent of adding cheese to pastry is to add it to parathas - in the stuffing or in the dough. When baking always preheat the oven to temperature specified.
