Cook at 350F until hot clear through and potatoes and green beans are soft, stirring occasionally. After they have cooked 45-60 minutes, stir, put remaining onions on top and put back in oven to brown the top. Remove. Serve hot. Delicious as a leftover! Makes 12-16 servings. (Divide ingredients in half to make 6-8 servings.) The first casserole I ever ate was chicken, mushroom and artichoke hearts simmered with soy sauce and Sherry. I can still see it, bubbling hot, served right from the oven in a covered, round Pyrex dish.

I have long since forgotten the name of the graduate student, my beau of the moment, who served it up. He clearly thought cooking for me, using his mother's treasured recipe, would be sure seduction. It didn't work. His strategy didn't impress me any more than the casserole did.
Fortunately, not long after this, my first post-college roommate, Betty Gorecki from Pulaski, Wisconsin, initiated me into the rites of making Tuna Noodle Casserole. Harboring none of my mother's prejudices, Gorecki, a home economics major at the University of Wisconsin, cooked frozen fish sticks regularly and believed in creamed spinach, making her white sauce from scratch. She also made a Bloody Mary hot enough to blister paint off the wall.

2 1/2 C grated cheddar or Monterey Jack cheese
1 lb. sausage, cooked and drained
* tsp. salt
1 tsp. pepper (more or less to taste)
2 tsp. mustard, optional
Grease the sides of the crock with butter.
If desired, spread mustard on one side of the bread and cut bread into large squares. Make layers in the Crockpot of bread, followed by sausage, followed by cheese, ending with a cheese layer.
Beat eggs, milk, salt and pepper together. Pour over Crockpot mixture, cover and turn on low. Cook for 8-12 hours.     pounds spaghetti, broken into 2-inch pieces 5 to 7 quarts prepared spaghetti sauce 3 to 4 pounds sliced pepperoni pounds shredded mozzarella cheese
Cook spaghetti according to package directions; drain. In six greased 13-in. x 9-in. x 2-in. baking dishes, layer equal amounts of spaghetti, sauce and pepperoni. Bake, uncovered, at 350° for 30 minutes. Sprinkle with cheese; bake 15 minutes longer. Yield: 50-60 servings

Source: Another of my aunt's recipes.
    qts. chicken, cooked, diced qts. celery, chopped bunches green onions with tops, sliced oz. chopped green chilies oz. pitted ripe olives, sliced cups slivered almonds oz. shredded cheddar cheese, divided cups mayonnaise cups sour cream cups crushed potato chips
Combine the first six ingredients. Add 2 cups cheese. Mix mayonnaise and sour cream; add to chicken mixture and toss. Spoon into four greased 13x9x1" baking dishes. Sprinkle with chips. Top with remaining cheese. Bake, uncovered, at 350°F for 20-25 minutes or until hot. Serves 50

This is a hearty and filling casserole for those nights when a long time in the kitchen is just out of the question. Very tasty and easy to make, my family requests it often. Enjoy!

    Spring and summer are times for barbecues and potlucks. It seems like everywhere you look, people bring their favorite casseroles to large gatherings. Casseroles are easy to prepare and do well for large crowds. They come in all different forms from the standard green bean casserole to something as fancy and delicious as crescent chicken casserole. I got together with a few of my friends and discussed our favorite casserole recipes and am passing them on to you here. I will start with the favorite of many the green bean casserole. All you do for this one is take a couple of cans of green beans, a can of cream of mushroom or celery soup, a half of a cup of milk, and some french fried onions. Combine part of the onions with the drained beans, whisk together the soup and milk, and then pour the soup mixture over the beans in a baking dish. This should be baked for about 30 minutes, then topped with some more of the french onions and baked for another 5 to 10 minutes. Green Bean Casserole
