Return To Cooking With Ken Cooking with Ken Recipe #23: TUSCAN BEAN CASSEROLE: This was made by Cyndie at the store and was one of my favorite bean casseroles. Beans are an important part of our daily staple and should be eaten at least once per day, preferably twice. This is a great way to get everyone to eat beans!
Tomato Marinade:
  • 2 cloves organic garlic
  • 2 tsp. granulated onion
  • 1 TBS vinegar (your choice of balsamic, rice or wine)
  • 2 TBS Olive oil
  • Mix: 1 TBS Frontier Vegetarian Chicken Broth Powder with 1/2 cup water and 1 TBS arrowroot powder. Set aside. Brown 1 pkg. of Gimme Lean Vegetarian Sausage. When browned, place into a large baking dish. Top with the following, layering as you go.
  • 1 can organic Great Northern Beans
  • 1 organic zucchini cut into small cubes
  • 1 small organic red onion cut into small cubes
  • Top with Soy or Rice Parmesan Cheese and Whole Grain Bread Crumbs; and bake at 350 degrees for 30 minutes. This is a wonderful dish to serve the whole family and a great way to eat all your favorites in a casserole combination!

    Zucchini or Corn Casserole
    (Torta de Calabacitas o Elote)
    Serves 6
    Ingredients:
    • 3/4 C. plus 1 Tbsp. plus 1 tsp. butter
    • 3 eggs
    • 2 tsps. sugar
    • 1 1/2 tsps. salt
    • 3/4 C. plus 1 Tbsp. plus 1 tsp. rice flour
    • 2 tsps. baking powder
    • 3 oz. farmer's cheese
    • 1 lb. grated zucchini or, the kernels from 7 ears of corn ground in a blender with a little milk
    • 1 poblano pepper cut in strips
    • 1 C. cream or sour cream
    Preparation: Cream the butter and sugar together until fluffy. Add the eggs one by one, beating after each addition. Add the flour, baking soda and salt. Mix well then add the grated zucchini or ground corn. Grease and flour a bundt pan. Pour a generous cup of the zucchini or corn mixture into the pan, then sprinkle some farmer's cheese on top of this, then some of the chili poblano. Repeat the layers ending with the cheese and chili. Serve warm with cream or sour cream on top.

    Casserole for a Super Sunday
    (Serves 6)
      8 jumbo eggs 2 tablespoons hot pepper sauce 1/2 cup flour 1 teaspoon baking powder 1/4 teaspoon salt 1 jalapeno pepper, minced 1/3 cup green peppers, chopped 1/3 cup red peppers, chopped 1/3 cup scallions, chopped 3 cups Monterey Jack cheese, shredded 1-1/2 cups Cheddar cheese, shredded 1/3 cup black olives, chopped
    Preheat the oven to 375 degrees. Lightly grease a 9-inch casserole dish with vegetable spray. In a large bowl, add the eggs and hot pepper sauce. Beat until light and fluffy. Add the flour, baking powder and salt. Mix well. Combine the remaining ingredients and mix very well. Pour into the casserole dish, and set in the oven for 25 minutes or until firm. Let it sit for 10 minutes, and then cut into slices and serve with your favorite salsa.

      Ground beef 1 pound Salsa 12 ounces Corn 1 cup Salad dressing 3/4 cup Chili powder 1 tablespoon Tortilla chips, crushed 2 cups Monterey Jack cheese, shredded 2 cups OR Mozzarella cheese, shredded 2 cups Lettuce, shredded (optional) To preference Tomatoes, chopped (optional) To preference
    METHOD OF PREPARATION Heat oven to 350 degrees. Brown meat; drain. Stir in salsa, corn, dressing and chili powder. Layer 1/2 each of meat mixture, chips and cheese in 2-quart casserole. Repeat layers and top with cheese. Bake 20 minutes or until thoroughly heated. Top with shredded lettuce and chopped tomatoes if desired.

    Chicken 'n Stuffing Casserole Presented by Becky Low on January 27, 2003
    "A fun take off on the traditional breakfast or bread pudding casserole. A great way to used leftovers or an easy way to fix a potluck dish. " Ingredients:

  • 3 cups dry stuffing mix*
  • 3 cups cooked chicken
  • 1 can (8 oz.) sliced mushrooms, drained (optional)
  • 2 cups part skim mozzarella or Monterey jack cheese, shredded
  • 1 cup sour cream
  • 4 cups milk
  • 1 can (10.75 oz) cond. cream chicken soup
  • 4 eggs
  • fresh parsley and chopped tomatoes, to garnish Method: Pre-heat oven to 350 F. Spread dry stuffing mix in the bottom of a greased 9x13 pan. Dice or shred chicken and arrange over dry stuffing mix. Sprinkle with drained sliced mushrooms and 1/2 the shredded cheese. Combine sour cream, milk, soup and eggs; beat well. Pour over filling. Cover and bake 350 F for 50-60 minutes or until set through. Remove cover, sprinkle with remaining cheese, return to oven to melt cheese. Garnish with fresh parsley and chopped tomatoes. Recipe serves 6-8. * NOTE: Use the top-of-the-stove style stuffing mix (breadcrumbs and seasoning mix).

    Tortilla Casserole Presented by Becky Low on November 08, 1999
    "Easy casserole, layered like lasagna, fast to prepare, ideal for busy Holiday shopping days ahead. Recipes serves 8. " Ingredients:

  • 1 lb. extra lean beef, **
  • 1/2 lb. lean sausage meat, **
  • 1 onion, finely chopped
  • 1 15 oz. can black beans, drained (about 2 cups cooked)
  • 1 4 oz. can green chili, chopped
  • 2 cups salsa
  • 8 corn tortillas
  • 1 cup nonfat sour cream
  • 1 10 3/4 ounce can cond. cream of chicken soup
  • 1 1/2 cups cheese, grated
  • cup olives, for garnish, (optional)
  • ** Recipe may use all beef, all sausage, or other meat of choice. Method: Brown beef, sausage, and onion together. Drain off excess fat. Add drained beans and the chillies. Spread 1/2 cup salsa on bottom of microwave safe casserole dish or a 9 X 13 pan. Cut tortillas in half and arrange 1/2 the tortillas on the bottom of the baking dish. Combine 1 cup salsa, sour cream, and condensed soup. Spread tortillas with 1/2 of the sour cream mixture. Spread with 1/2 the meat and bean mixture, sprinkle with 1/2 the cheese. Repeat process. Cover with plastic wrap (be sure wrap does not touch casserole). Microwave on high for 20 min. turning 2-4 times during cooking process. Casserole is done when it is hot and bubbly in the center. Remove from microwave, allow to stand 10 min. before cutting. Garnish with sliced olives and remaining salsa. NOTE : Casserole may be baked in traditional oven. Replace plastic wrap with foil and bake at 350 degrees for 30-40 minutes or until hot and bubbly.

    1/2 t. salt 1 cup milk 1/3 cup cooking oil 1 slightly beaten egg 1/2 cup shredded cheddar cheese Cook ground beef and onion in a 12 inch dutch oven over medium hot coals until meat is browned. Spoon off fat, stir in tomatoes with chiles, tomato sauce, water and rice. Top with beans. Meanwhile combine flour, cornmeal, baking powder and salt in a medium bowl. Combine milk, cooking oil and beaten egg in a small bowl. Stir milk mixinto flour mix just until combined. Spread over beans. Place 20 hot coals around the bottom edge, cover and place 25 hot coals on lid. Cook for 25 minutes or tests done. (the old toothpick trick) Sprinkle top with cheese.
