Chinese Turkey Vegetable Casserole Ingredients
1 can (1 pound) French-cut string beans, drained
1 can (1 pound) Chinese mixed vegetables, drained 1 can (8-1/2 ounces) water chestnuts, sliced and drained 1 can (8 ounces) sliced mushrooms, drained 1 small onion, chopped 1 cup grated Cheddar cheese 4 cups cubed cooked turkey (or chicken) 1 can (10-3/4 ounces) cream of mushroom soup 1 ounce sherry 1 cup milk 1 can (3 ounces) french-fried onions Instructions Alternate layers of vegetables, cheese, and chicken in greased 9 x 13-inch casserole. Combine soup, sherry, and milk; pour over casserole. Cover loosely with foil. Bake at 350 degrees F. for 40 minutes. Remove foil; sprinkle onion rings on top. Bake 20 minutes longer. Yield: 6-8 servings Note : May be frozen; thaw before baking.

  • 1 can cream of celery soup
  • 1 cup mayonnaise
  • 1 egg - beaten
  • 2 packages frozen chopped broccoli (10 oz)
  • 1 package frozen cauliflower (10 oz)
  • 12 oz. shredded Cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/8 tsp paprika
Preparation - Spray a large casserole dish with non-stick spray. In a mixing bowl combine soup, mayonaisse and beaten egg. Place partially thawed broccoli and cauliflower in another large mixing bowl. Stir in soup, mayonnaise and egg mixture. Add 8 oz. cheese and seasonongs and mix well. Pour mixture into prepared casserole dish. Smooth top of casserole using spatula. Bake at 350ยบ for 45 minute. Top with remaining 4 oz. of cheese and bake 5 minutes longer. Two-Potato Casserole Serves 4 Nonstick cooking spray
1 cup apple cider
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground cloves 1 tablespoon unsalted margarine 2 medium-size sweet potatoes (about 2/3 pound), peeled and sliced 1/8 inch thick 2 medium-size baking potatoes (about 3/4 pound), peeled and sliced 1/8 inch thick 1. Preheat the oven to 450 degrees F. Coat a 1-quart ovenproof glass casserole, and a sheet of aluminum foil just large enough to cover it, with the cooking spray; set aside. 2. In a small heavy saucepan, bring the apple cider, salt, pepper and cloves to a boil; cook, uncovered, until the cider has boiled down to 1/2 cup about 5 minutes; set aside. 3. Melt the margarine in another small saucepan. On the bottom of the casserole, arrange a single layer of the sweet potatoes, drizzle with 1/2 teaspoon of the melted margarine, and spoon 1 1/2 tablespoons of the cider over them. Cover the sweet potato layer with a layer of the baking potatoes. With your hands, press the potato layers firmly together. Continue to build and compress 5 more layers of the potatoes, margarine, and cider in eh same fashion.

    It doesn't take a can of soup to make a casserole. Hillary Clinton said something similiar to that, but I can't remember.... Anyway, the soup. No, no, NO! Blechdon't go there. Do you have any idea how many milligrams of salt ONE can Cream of Yuck soup has in it? Did you know that stuff has been declared public enemy number one to your health and is on the same No-No list as french fries from Burger King? Okay, I think I made my point. There are so many ways to make a casserole without having to resort to a can of soup or a slab of melted Velveeta.

    Chicken en Casserole
    Cut two small, young chickens in pieces for serving. Season with salt and pepper, brush over with melted butter, and bake in a casserole dish twelve minutes. Parboil one-third cup carrots cut in strips five minutes, drain, and fry with one tablespoon finely chopped onion and four thin slices bacon cut in narrow strips. Add one and one-third cups Brown Sauce and two-thirds cup potato balls. Add to chicken, with three tablespoons Sherry wine, salt and pepper to taste. Cook in a moderate oven twenty minutes, or until chicken is tender. If small casserole dishes are used allow but one chicken to each dish.
