Of all styles of cooking casseroling is the most economical, the cheaper cuts of meat being excellent for the purpose. Dishes of this kind also give the cook opportunity for using vegetables to the best advantage. A ragout (ra-goo) can be made of beefsteak or neck of veal or mutton. If mutton or veal is used it is best to keep to white vegetablesonions, potatoes, artichokes, celery, white turnips. With beef, carrots and tomatoes may also be added.

    There's something comforting about breakfast casseroles. They take minutes to prepare. They give you just enough time to relax with a cup of coffee while they're baking. They fill the house with an aroma that reminds people that life is good. They tend to be easy to transport and clean up after. They are great make ahead meals and they almost always impress those around the table. So, as the new year gets its start, why shouldn't we celebrate with a breakfast casserole? This month's recipe is a versatile casserole that starts with a crust of baked hashbrowns. Then a bevy of fillings are kissed with a little heat from the stove and poured over the potatoes. By the time it's done, you've got potatoes, eggs, dairy and even sausage on the table. (You might want to serve the orange juice separately!) There are even ways to tweak this recipe to make it relatively healthy. Try using thinly sliced Canadian bacon instead of the sausage, an egg substitute, skim milk and reduced fat cream cheese. I don't recommend using fat free cream cheese because the texture will not work with this recipe. So there you've got it. A breakfast casserole that's fast, versatile and tasty. What more could you ask for? Well, maybe that tall glass of orange juice!

    TUNA CASSEROLE
    8 oz medium egg noodles
    2 1/2 qts boiling water
    1 tbsp cooking oil (optional)
    2 tsp salt
    10 oz condensed cream of mushroom soup
    1 cup yogurt
    1/4 cup chopped green onion
    7 oz flaked tuna, drained
    1/2 cup grated Parmesan cheese
    10 oz sliced mushrooms with juice
    1/3 cup sliced green-pimiento-stuffed olives (I leave these out) 1/2 tsp salt 3/4 cup grated, medium Cheddar cheese Paprika, sprinkle Cook noodles in boiling water, cooking oil and first amount of salt in uncovered Dutch oven until tender but firm, about 5 to 7 minutes. Stir occasionally. Meanwhile, combine next 8 ingredients together in large bowl. Drain noodles and add them to mixture. Mix. Turn into greased casserole. SUBMITTED BY TERRI L.     Bush Mud Casserole
    Game Birds Get some stiff yellow clay or the sticky black- soil found close to most rivers and swamp, moisten and work it up to the consistency of putty, and coat the birds thickly with it, afterwards dusting the clay with dry sand or ash and moulding the clay-covered bird to the shape of a small football. Dig a pit eight inches deep in hard ground if available; if it is not, dig the hole in damp sand and line it with stones to prevent the sides from caving in. Light a good fire in this pit, let it burn down to ash, and brush the ash out with a bough, then pack the clay-covered birds into the hot pit, cover thickly with hot sand and ash, light a steady fire above it, and keep it burning for at least two hours. Allow the fire to die down to ash, uncover the birds by brushing gently with a green bough, and roll each ball of clay on to a sheet of bark or tin to get it out. At a touch from a pointed stick the clay breaks away, taking all the skin and feathers with it and leaving behind a bird cooked to succulen

    TUNA CASSEROLE ALA MILLSFAMILY
    3 cups medium pasta(I like to use the multicolored spirals)
    1/2 cup celery
    1/2 cup onion
    1 can cheddar cheese soup
    1/2 cup mayo (I use Miracle whip... it gives it that extra little flavor!)
    3/4 cup wine (I use a dry white)
    1 Tbl dill weed
    2 6oz cans tuna packed in water, drained
    1/4 cup pimento
    1/2 cup sliced black olives
    1/2 cup sharp cheddar cheese, shredded French Fried Onions Cook pasta. (of course I'm sure you knew this part! lol) Drain, set aside. Of course there are many variations for Tuna Casserole, including making it a salmon, crab or shrimp casserole. This is one of DH's favorite meals. I serve this with salad, and garlic toast.     As I write this, it is after New Year's Day, and winter has finally arrived here in Toronto - and it is serious about making up for lost time, with cold and snow the likes of which have never been seen here (and which is causing no end to amusement to people in other parts of the country where this is of course perfectly normal winter weather!). Anyways, when it is cold and snowy outside, a hot hearty casserole is just the thing to warm you up on a winter weekend. Mix it up and put it in to oven to bake while you go out skiing or skating (or if you are not a winter person, like I'm not, while you sit by the fire with a book). Casseroles are mostly quick and easy to prepare. Most of these also freeze well, so I'll make a big casserole on the weekend and freeze in individual servings for a quick meal during the week.

    1 egg
    1/2 cup rice
    1 tsp sugar 1 tsp. Creole Seasoning 1 beef bullion cube dissolved in 1/2 cup of water Salt and Pepper Pull outer leaves of the cabbage leaving them whole. Rinse well. Take some of the inner parts of the cabbage and chop - about 2 cups worth. In a large bowl put the ground beef, raw vegetables, chopped cabbage, egg, rice, 1/4 can of tomato sauce, 1/4 can stewed tomatoes and liquid (crush the tomatoes), 1/4 of the bullion liquid, creole seasoning and sprinkle salt and pepper. Use your hands to mix this up very well.

    Macaroni met ham en kaas 250 grams elbow macaroni
    150 grams cooked and diced ham
    150 grams grated Gouda or Cheddar cheese
    50 grams butter or margarine
    breadcrumbs
    1 tsp salt Boil the macaroni in ample, salted water for about six minutes, then drain thoroughly. Mix in the ham and cheese. Butter an oven-proof dish and ladle in the macaroni mix. Cover the mix with a layer of breadcrumbs. Melt the rest of the butter and pour it over the breadcrumbs. Put the dish in a preheated oven at 220ºC (430ºF) and bake for 15 minutes.
