Product Description

"Although I never physically fit in . . . being the sole tall, awkward African American among a sea of beautiful blonde, blue-eyed Swedes, it was my home. When I tasted the first potato of the summer, just dug out of the ground, or when I picked the first ripe cloudberry and popped it in my mouth, or when I took in the scent of seawater and we grilled salmon just off the boat, it didn't matter what I looked like - I was Swedish.I was home, and I did belong."-Helene HendersonDrawing on her fondest childhood memories, Helene Henderson offers welcome insight into the treasures of Swedish cooking. From the potato, a Swedish staple, to dessert, the start of Swedish cuisine, The Swedish Table contains more than 125 recipes, including Yellow Pea Soup with Bacon (Artsoppa), Lentil Salad with Radishes (Linssallad), Aquavit and Dill Marinated Salmon (Gravlax), Swedish Meatballs with Gravy (Kottbullar), and the country's traditional pastry, Bulla.Encompassing both traditional Swedish dishes and modern, updated recipes, Henderson combines the ingredients and scents from the past with the produce and flavor of today. The Swedish Table includes an extensive guide to Swedish traditions and celebrations, the foods that accompany them, and a color gallery of photos. With this complete collection of elegant yet easy-to-follow recipes, Henderson takes us on an enticing tour through the magic of the forest, the lakes, and the farms of the Swedish countryside.

2-0 out of 5 stars Not impressed
I purchased this book for my boyfriend, who is Swedish, and I thought we could make some of the recipes together. However, we found that the recipes were either very unhealthy (contained ridiculous amounts of butter and cream) or were very complicated to prepare, so we haven't used it much. The recipes in the cookbook are not so much classic Swedish dishes, but more interpretations of Swedish dishes for a fancy restaurant. So if your goal is making some fancy Swedish-style food this might be for you.

5-0 out of 5 stars Swedish recipes
In The Swedish Table Helene Henderson has presented recipes that are clear and easy to understand and follow. She often includes an interesting story about the origin of the recipe. I'm not sure how typically Swedish some of these recipes are. Some, like the yellow split pea soup with bacon, are improvements on the old classics in that she has added ingredients that give them more flavor. Recipes in my older Swedish cookbooks produced fairly bland, uninteresting food. The recipes in Ms. Henderson's cookbook are an improvement on those older cookbooks in that she has has spiced up her recipes to appeal to modern, more sophisticated palates.

5-0 out of 5 stars Best modern Swedish cookbook covering the classics!
My mother was born in Sweden and has lived in the United States for 30+ years.Swedish specialties have always been important to us.As I have tried to master key Swedish recipes and delicacies myself over the years, I have struggled find cookbooks that were practical and meaningful to my life today. Many of the old Swedish cookbooks that I grew up with and have come across over the years seem to be from the 1950's or earlier and call for ingredients that are impossible to find in the United States and/or aren't palatable to most non-Swedes.Helene Henderson's Swedish Table is the first cookbook I have found that covers all of the Swedish classics like Gravlax, potato pancakes, pyttipanna, pea soup, swedish meatballs, kräftor, and Swedish potato salad, while using ingredients that are readily available today in the United States. The dishes themselves aren't modern, however, and she is careful to provide information about how the dish is classically created in Sweden, as well as the Swedish translation of the name of the dish, all of which I value greatly. She spends several pages in the book discussing Swedish traditions and holidays and provides guidance for preparing a Swedish Christmas feast, the traditional Smörgåsbord, a Midsommar celebration, and a kräftor (crayfish) party! She's spot on in her descriptions of classic Swedish traditions. Also, Helene's background is fascinating (as she describes in the book) and she is now a successful caterer/chef in L.A. (after having grown up in Northern Sweden), so she's a fantastic cook! These recipes are delicious.

I can't say enough about this cookbook. If I could give it more stars I would.I wish Helene would give us some more books!I refer to this cookbook frequently and it is my go-to guide for authentic Swedish cooking. My mother even recommends it!

5-0 out of 5 stars Friendly, authentic and down to earth
I got to Swedish cooking in a bit of an unorthodox way: I was reading the books of Stieg Larsson, and he spends a lot of time describing what his characters are eating. The food sounded wonderful, and of all the books I got to explore Swedish cooking, this one is the most user-friendly, realistic, and covers the most ground. There are a number of fine books on Swedish cooking, mostly from Britain, but they seem to be written more from a "fine cuisine" standpoint, whatever the jacket says (lovely pictures, though). This is food you can make every day without loads of fuss. The author also discusses what is and is not available in the US, and what local substitutes to make. Through her anecdotes, she communicates the ethos behind Swedish food, the emphasis on fresh and local when possible, but also the role that preserved food, berries, pickles, cheese, smoked fish and game, plays in a country where a large part of it is above the Arctic Circle, and farming is a short and sweet rush. I highly recommend this for anyone wanting to learn about and cook a very underappreciated cuisine (in the US anyway) without spending half the day in the kitchen, or buying a ton of odd ingredients you'll only use for one dish.

4-0 out of 5 stars Worth to buy
I like books like this one - with memories, family stories and home recipes. The sweet rolls I baked were perfect. I miss pictures - there are only a few. The book is worth to buy because it presents regional Swedish kitchen which is not very popular. We think about French or Italian kitchen, but the Swedish may be good as well and not boring. Healthy, light and colourfull. ... Read more

5-0 out of 5 stars A must for your cookbook collection.
I originally found this cookbook at the library and, after looking through it at home, decided I had to have it.Using Amazon, I found just what I wanted--at the best price. As always, Amazon delivered exactly as promised! In fact, the book arrived within ten days of placing the order. As indicated by the title, the book contains authentic Swedish recipes, collected over many years and revised and expanded through four editions, being translated into English for the first time with this edition. If you like Swedish goodies, this is the book for you.

5-0 out of 5 stars Best cookbook ever
This is the best cookbook I've ever used, not a single recipe has failed me, and the result is always a yummy treat, often with not much sugar used. The currant cookies yield about 40 cookies, and only 1/4 c. sugar is called for, they are delicious and not too fattening. This is the next best thing to actually traveling back to Sweden. Now, if only they would get going and publish a book on soups, I'd be set for life.

5-0 out of 5 stars Delicious, and gorgeous, results!
This is a thoroughly modern baking cookbook that easily and systematically takes you through the steps of completing the most delicious and gorgeous baked goods. This book has been around for decades but has been frequently updated to ensure that it meets the needs of today's bakers. I have several versions and love each of them.

1-0 out of 5 stars Quite disappointed
I was really looking forward to the arrival of this book of Swedish recipes, but I doubt I'll make more than one or two and that's supposing I don't decide to return it instead [becoming more and more likely].The first thing that disappointed is that its in paperback, perhaps I overlooked that, but even if it is paperback, that shouldn't preclude color photographs if the paper quality is good. The paper is low grade stock like a newspaper and photos are in black and white and thus you are left with smudgy looking greyscale. I'd have no way to know whether my dish turned out looking as it should from these photos. Next problem [for me anyway] is that the vast majority of dishes are fish. I realize that fish is an important ingredient in Swedish cooking, but herring is NOT all that's available and there are way too many herring recipes.Thirdly, much of the ingredients [including the main fish called for] are not readily available in grocery stores, at least not in North Texas. I think I'll just gather a few favorites by visiting recipe websites for Swedish standards like Raggmunk,Pyttipanna, and of course Köttbullar [Swedish meatballs :)]

4-0 out of 5 stars Older recipes that may appeal to an older generation
You'll find a wide range of Swedish recipes, some that are common with almost all Scandinavian cooking, in this older cookbook. Some of the recipes would probably appeal to an older generation of cooks. There are recipes too that would fit modern tastes.

Overall, if you are starting to collect Swedish or Scandinavian cookbooks this cookbook would make an excellent choice.

Recommend.

5-0 out of 5 stars A Culinary Travel to Sweden
International cooking is yet another way to indulge in armchair travel---so, sparked by the WALLANDER series on PBS, I thought it would be intriguing to try some Swedish recipes.
Wifstrand's small cookbook is a useful look into Swedish cookery---I was a bit surprised to find that American interpretations of some of the dishes are rather amped up in the way of spices, because these recipes are hearty, but plain. The sweets recipes rise above those of the main courses, but I have enjpyed everything I have tried.

1-0 out of 5 stars not swedish
I bought this book for a friend with Swedish Heritage.I am glad that I looked at it before giving.A Swedish author writing about French and Italian recipes is not what I was looking for and not what the title implied!

5-0 out of 5 stars "a piece of cake"
the english title is very misleading- i own the swedish version, which is called "a piece of cake" and is much more fitting.
this cookbook does have a lot of american, british, and italian recipes, but contains some of the best recipes for the foods i loved so much during my year in sweden: chokladbollar (chocolate coconut bombs), kardemummaknutar (those cardamom rolls), prinsesstårta (princess cake), kladdkaka (that sticky toffee cake), and two very swedish breads: knäckebröd and dalabröd. i like that she included so many varieties of sugarcakes, as they are extremely common in sweden, and the texture of the muffin recipes are consistent with swedish muffins, not american ones. other recipes have a swedish twist: the chocolate chip cookies call for lime zest, and many use cardamom... a spice i was hardly aware of until being inundated with it in every swedish pastry i tried! and all the different elderflower/berry items! love it. you can watch her make some of the recipes on her show, "leila bakar", on the website [...].

1-0 out of 5 stars Not Swedish by a long shot
The title of this book might as well be "Sweet and Savory Baking on the Moon" because it has just as much to do with Swedish baking. Yes, the author is part Swedish and that's apparently where she lives and is on TV, but that's about it from what I can tell. Most of the recipes are French, English, and tons of Italian with a few Swedish sprinkled in. If I wasn't expecting Swedish recipes, I'd probably like this book better. It has lots of color pictures and the recipes look good. On the technical side, this book is printed on matte paper, so you don't get those great glossy pictures that are so much fun to look at. It feels kind of cheap -- like one of those Food Network books. ... Read more

Product Description
To many Americans, Swedish cuisine remains a mystery. From the Baltic Sea, the 100,000 lakes, and numerous rivers comes a wealth of fish and shellfish. Abundant forests provide game, mushrooms, and berries. These mild delicacies, combined with staples like potatoes and other root vegetables; grains such as rye; and herbs and spices, including dill and cardamom, make up husmanskost, or classic Swedish home cooking. The stories and recipes in A Swedish Kitchen celebrate this cuisine.

A Swedish Kitchen: Recipes and Reminiscences is the story of an American woman's 25-year love affair with the land, people, and cuisine of this Nordic nation. Sharing her love of food and cooking, Judith Pierce Rosenberg leads readers to markets in search of wild strawberries and smoked reindeer, and to cafés for a cup of strong Swedish coffee and a kanelbulle (cinnamon bun) or mazarin (almond tart). Among her culinary adventures are dinner at a wilderness lodge, a medieval banquet, and a Christmas smorgasbord with all the trimmings.

Throughout this culinary memoir, Rosenberg interweaves the historical and cultural context of Swedish cooking, explaining the history of waffles and the traditions behind Saint Lucia Day. A Swedish Kitchen includes 80 recipes that highlight traditional Swedish flavors and ingredients, such as red currants, cloudberries, and cardamom, Recipes are designed for use in the American kitchen, enabling readers and cooks to easily prepare such Swedish favorites as rabarbersoppa (rhubarb soup), prinsesstårta (princess cake), and Janssons frestele (Jansson's temptation). ... 5-0 out of 5 stars Needed to Return!
Order was processed professionally, but it was necessary to return this item.No problems there, either!

5-0 out of 5 stars Great book!
Exactly what I want to give my daughter for a Christmas gift! She's recently moved to a community with a strong Swedish heritage.

5-0 out of 5 stars Really enjoying this book
The author and I have something in common - we're both Americans who are married to Swedes. The first half of this book is about her travels in Sweden, the people she's met and the places she's shopped or dined at - which is great for me, since I've been over to Sweden quite a few times now.I haven't actually tried any of the recipes yet, but my husband has looked at them and thinks they're quite authentic. He can't wait for us to try some of them!

5-0 out of 5 stars Swedes explained!
I am the recent bride of a Swede (that makes it sound like some Viking conquest!), and I was so happy to find this book with stories and recepies that the author, also an American married to a Swede, enjoys. Learning not only the way to prepare my husband's favorite dishes that we can't find ready-made in the US, but also learning the background of each special occasion or holiday that these dishes are tied to really expanded my knowledge and understanding of this other country that I visit every year as well as of the man I married. My husband was very happy with our Christmas feast this year. This book made a big difference. Tack ska du ha, Judith!

3-0 out of 5 stars more memoirs than recipes
This cookbook was more memoirs than recipes. There were very few recipes for very common swedish items such as swedish crisp bread ( a staple). This is NOT a reference book. It is merely following a wealthy woman's travels while enjoying Swedish food. Her memoirs were somewhat interesting, but it became repetitive towards the middle of her book. Some of the recipes were accurate. ... Read more

5-0 out of 5 stars Sweet and Swedish!
My Grandmother introduced me to this book years ago by her use of it to make her annual batches of Swedish Pepparkakkor and Swedish Spritz cookies. She would (and still does) make them every December to those who are lucky enough to receive these yummy cookies! She uses this recipe, but instead of rolling out the Pepparkakkor cookies, she spreads them out in flat layers using a cookie press. The cookies are easy to make and lots of fun to decorate for kids and adults.

She also uses this book to make Swedish meatballs that are always a favorite of all who come to her annual holiday party!Everyone who tries them looks forward to her making them again next year!!

I now make the two cookie recipes every year (as they are my particular favorites), and I am also little by little trying out the other recipes.I am finding each one to be consistently great!I think that if you would like a few Swedish recipes that are tried and true terrific ones then this is the recipe book for you!!!! ... 1-0 out of 5 stars Nothing Swedish about it - universal junk food recipes
You might lose friends with this "stocking stuffer"

This book is not uniquely or traditionally Swedish in any way.The amount of sugar, white flour, corn starch, etc. typical of grandma's conventional recipes is huge.

These recipes are just a lot of the same old, same old junk food recipes of all countries - only with a Swedish title.

This is old stuff, and nothing new or unique. Moldy leftovers from the 20th century, it is industrial-era empty calorie stuff. It was written in the 1980s but was even obsolete then. The people who gave it five stars must be new to cooking and/or never heard of healthy food, much less organic or natural food.

Can't imagine the shapely healthy progressive Swedishculture eating this stuff (though I am sure there is a subculture there that does eat it.)They would have a much higher obesity rate, maybe even higher than ours in the fat ole U.S.A. if most Swedes ate this, and their kids would all be hyperactive.

5-0 out of 5 stars Desserts Galore
I got this cookbook as a Christmas give for my Swedish wife. She loves the dessert recipies, especially the Cocoa Balls and the Coffee Bread. If you combine this book with "Good Food from Sweden" by Inga Norberg, you'll never lack for recipies to remind you of your Swedish roots.

5-0 out of 5 stars Cooking the naturally delicious way
Splendid Swedish Recipes, in the popular recipe-card file size Stocking Stuffer format, is chock-full of the best recipes and notes on Swedish cuisine. Compiled by Kerstin Olsson Van Gilder, who came to America from Sweden in 1961, and refers to Swedish foods as "cooking the naturally delicious way."The Swedish diet consists mainly of fish (herring) and potatoes, making the food lighter than traditional American cuisine. This cookbook is inspired by the Swedish love of wholesome, natural foods. The cover shows a little girl in a Swedish folk-style outfit.

In addition to recipes, Splendid Swedish Recipes contains information on The Smorgasbord (a long table buffet Scandinavian tradition), Foods for Special Holidays and Seasons, Notable Sites and Events as well as historical information on the Swedish-American Experience. The book offers you plenty to choose from to make a Swedish feast for family and friends. Try the Swedish Kale Soup or the Swedish Meatballs. Stuffed Cabbage and Rye Bread will suit almost any table! And desserts are the Swedish specialty! Try the Coffee Bread or the Cocoa Balls to end the perfect meal! This is just a sampling of what is offered!

This book is excellent for personal collections and as a gift for anyone interested in Swedish cooking and heritage. ... Read more
